This is the perfect salad to serve with your Mexican dishes. It is light, healthy and delicious too!
6 c. mixed salad greens
4 T. olive oil
2 T. fresh lime juice
1 t. Dijon mustard
1/2 t. garlic powder
1/4 t. ground cumin
1/4 t. salt
1/4 t. ground black pepper
Wash salad greens. Place greens in a large bowl.
In a small jar or bowl with a lid, shake together remaining ingredients. Pour desired amount of vinaigrette over greens just before serving. There probably will be some leftover dressing.
