Even if you and your family aren't green bean lovers, they will enjoy these warm, crisp green beans cooked with red onions and bacon. Mmmmm, good!
2 slices bacon, cut in half
1 lb. fresh green beans, washed and ends snapped
1/2 t. Kosher salt
1/4 t. black pepper, freshly ground
1/2 small red onion, thinly sliced, about 1/2 cup
Cook bacon in a large skillet that has been warmed on stove on medium high heat. Place the cooked bacon on paper towels to drain. Leave about a tablespoon of grease remaining in the skillet. If there isn't a tablespoon's worth of oil, add a pat of butter to the skillet.
Adjust heat to medium and add the green beans to the skillet. Toss or stir to coat them in the grease. Sprinkle with salt and pepper, and cover with a lid. Let the green beans cook for 2 minutes, stir and cover again. Cook 2 minutes more and stir again.
Add the onions to the skillet and stir to combine. Continue cooking and stirring occasionally for 2-3 minutes, just until the beans are a tender and still a little crisp. Crumble the bacon and toss it back into the green beans. Remove from the heat and serve.
