Description
Enjoy this low-carb, low calorie dish instead of mashed potatoes for your next dinner. It's healthy for you and really delicious too.
Ingredients
- 1 medium-sized head of cauliflower, chopped into florets
- 1 leek chopped, tops removed and discarded
- 3 T. butter, divided
- 2 T. plain Greek yogurt
- chives, chopped
Steps
- Saute leek with 1 T. butter until tender; set aside.
- Boil cauliflower until tender, about 6 minutes. Drain cauliflower, pat dry between several layers of paper towels or clean dish towel to get the moisture out.
- Put hot cauliflower, leek, yogurt and 2 T. butter in food processer, blend until smooth.
