Enjoy this low-carb, low calorie dish instead of mashed potatoes for your next dinner. It's healthy for you and really delicious too.
1 medium-sized head of cauliflower, chopped into florets
1 leek chopped, tops removed and discarded
3 T. butter, divided
2 T. plain Greek yogurt
chives, chopped
Saute leek with 1 T. butter until tender; set aside.
Boil cauliflower until tender, about 6 minutes. Drain cauliflower, pat dry between several layers of paper towels or clean dish towel to get the moisture out.
Put hot cauliflower, leek, yogurt and 2 T. butter in food processer, blend until smooth.
Transfer to serving dish, top with butter and garnish with chives
