This is such an easy casserole to make and everyone will enjoy it too. Make it in advance to save yourself time on the holiday. Put the topping in an air-tight baggie and the casserole itself in a separate one. On the day that you want to serve it, put th
2 large cans of chunked sweet potatoes/yams
2 c. sugar
4 eggs
1 stick unsalted butter
1 c. milk
½ t. nutmeg
½ t. cinnamon
Topping:
2 c. corn flakes, crushed
1 c. pecans, chopped (or walnuts)
1 c. brown sugar
1 stick unsalted butter, melted
Preheat oven to 350 degrees.
Combine casserole ingredients in electric stand mixing bowl. Mix with paddle attachment, starting on low to avoid splattering. Increase mixer speed to medium and continue until well blended.
Pour into large shallow casserole dish and bake 1 hour, or until the middle of the casserole is just about set.
Mix topping ingredients in bowl and sprinkle topping on casserole. Bake an additional 10 minutes, just enough for topping to melt together and brown.
