Make this healthy but delicious side dish for your next holiday dinner. It is moist and spicy as well as nutritious. It is high in fiber, and the complex carbohydrates will make you fell full longer than traditional white potatoes.
4 medium sweet potatoes, peeled and cut into 1 1/2-inch-thick rounds
3 T. olive oil
4 large garlic cloves, minced
1/3 c. fresh thyme leaves, plus 6 thyme sprigs for garnish
1/2 t. kosher salt
1/2 t. red pepper flakes
Preheat oven to 450 degrees.
In large mixing bowl, combine all ingredients and toss.
Arrange potato slices in single layer on heavyweight rimmed baking sheet or in 13×9-inch baking dish. Place on top rack of oven and roast until tender and slightly browned, about 20-40 minutes, depending on the thickness.
Flip them half way to brown both sides. Serve warm or at room temperature, garnished with thyme sprigs.
