This is a versatile stew which can be made with any meat, beef, pork chicken or turkey or a combination of whatever you may want. The meat doesn't have to be ground meat either. Use leftover meat if you wish. It basically can be a combination of leftover
1/2 lb. lean ground beef
1/2 lb. ground sausage
28 oz. beef stock
16 oz. can lima beans (or frozen)
12 oz. can whole kernel corn, drained
2 med. carrots, peeled & diced
2 med. potatoes, peeled & diced
1 stalk celery, diced
14-15 oz. can whole tomatoes, drained (diced)
1 sm. onion, diced
1 whole bay leaf
1 T. Worcestershire sauce
1/4 whole green pepper, diced
2-3 T. cornstarch
1/2 c. water
In 6 quart saucepan brown beef and sausage. Remove meat from pot. Drain off grease and discard. Add to pot beef stock, lima beans, corn, Worcestershire sauce and bay leaf. Add tomatoes, carrots, potatoes, celery, green pepper and onion.
Cover pot and simmer at medium temperature 30 minutes. Reduce heat to low, add meat. Stir well. Combine cornstarch and 1/2 cup water. Add to stew mixture. Stir until thickened. Simmer for another 10 minutes.
