Description
Serve this quick and simple dip for a change of pace. It is beautiful and so delicious.
Ingredients
- 6 oz. broccoli florets (2 c.)
- 1/3 c. mayonnaise
- 2 t. fresh lemon juice
- 1/4 t. kosher salt
- 6 basil leaves
- 3 garlic cloves, peeled
- 1 (1 1/4 oz.) slice bread, torn
- 1 anchovy fillet
Steps
- Cook broccoli in boiling water 3 minutes or until crisp-tender. Drain. Rinse under cold water until cool. Drain well.
- Combine all ingredients in a food processor; process until smooth. (add lemon juice right before serving or it will turn the broccoli brown)
- Serve on grilled crusty bread, veggies, crackers or as a sandwich spread.
