Four Cheese Garlic Bread

Description

This dish is perfect as an appetizer, light lunch or even as a side dish alongside soup and/or a salad.

Ingredients

8 slices wheat bread
1/3 c. butter, room temperature
2 to 3 garlic cloves, chopped
1 t. chopped fresh thyme or dried thyme
1 t. paprika
1/4 c. chopped Italian parsley
salt and freshly ground pepper, to taste
3/4 c. grated white Cheddar cheese
3/4 c. grated Cheddar cheese
3/4 c. grated Mozzarella
1/4 c. grated Parmesan cheese
1 large tomato, sliced into 8 slices
1 small onion, sliced 4 chives, sliced

Preheat oven to 400 degrees degrees. Line baking sheet with parchment paper.

Garlic butter:
Combine butter, garlic, thyme, paprika, Italian parsley, and salt and pepper.

Spread garlic butter on 8 slices whole wheat bread. Cover each bread the with the grated cheeses. Transfer to prepared baking sheet.

Place 1 slice of tomato and several slices on onion on each bread slice. Sprinkle with the chopped chives and season with salt and pepper.

Bake until cheese melts and bread is toasted, about 10 to 15 minutes. To speed up the process, finish under broiler, if desired.
