This warm, rich and creamy dip features garlic, artichoke heards, 2 differents cheeses, mayo and pimentos all mixed, heated and served on chips or Melba toasts or whatever you prefer. Make it for the holidays!


14 oz. can artichoke hearts, drained, finely chopped
5 oz. feta cheese, crumbled
3/4 c. mayonnaise
1/2 c. grated Parmesan cheese
1- 2 oz. jar pimientos, drained and diced
2 t. minced garlic
pita chips or Melba toast, for dipping


Preheat oven to 350 degrees.

In a medium bowl, stir together artichoke hearts, feta, mayonnaise, Parmesan cheese, pimientos and garlic until thoroughly combined. Transfer the mixture to a small casserole or glass pie plate and bake, uncovered, for 25 minutes, or until lightly browned.

Serve with pita chips or Melba toast.
