Warm Feta Dip with Artichokes

Description

This warm, rich and creamy dip features garlic, artichoke heards, 2 differents cheeses, mayo and pimentos all mixed, heated and served on chips or Melba toasts or whatever you prefer. Make it for the holidays!

Ingredients

  • 14 oz. can artichoke hearts, drained, finely chopped
  • 5 oz. feta cheese, crumbled
  • 3/4 c. mayonnaise
  • 1/2 c. grated Parmesan cheese
  • 1- 2 oz. jar pimientos, drained and diced
  • 2 t. minced garlic
  • pita chips or Melba toast, for dipping

Steps

  1. Preheat oven to 350 degrees.
  2. In a medium bowl, stir together artichoke hearts, feta, mayonnaise, Parmesan cheese, pimientos and garlic until thoroughly combined. Transfer the mixture to a small casserole or glass pie plate and bake, uncovered, for 25 minutes, or until lightly browned.
  3. Serve with pita chips or Melba toast.
