Blueberry Danish

Description

These little treats make a delicious breakfast/brunch or a tasty dessert. It's easy because it is made from a store-bought frozen puff pastry, filled with cheese and fruit. Yum!

Ingredients

Blueberries:
1 c. fresh blueberries
1 T. flour
1 T. sugar

Danish:
1 T. cinnamon
¼ c. plus 1 T. sugar
2 oz. of an 8 oz. package cream cheese, softened
1 pkg. Puff Pastry sheets, slightly thawed but not warm
2 T. butter, melted

Glaze:
¾ c. powdered sugar
1 T. milk

Preheat oven to 400 degrees. Spray a baking sheet with non-stick spray.

Blueberries:
In a small bowl, toss blueberries with the flour and the sugar. Set aside.

Danish:
In a separate small bowl, combine cinnamon and ¼ cup of the sugar.

In a third bowl, mix cream cheese and the remaining 1 tablespoon sugar. Set aside.

Flour the work surface with a little bit of flour. Unfold pastry sheets on work surface. Brush the pastry sheets with butter and sprinkle with cinnamon sugar mixture. Using a pizza cutter or knife, cut the pastry sheets into 12 long strips.

One at a time, twist each pastry strip and roll into a coil. Tuck the end of the pastry strip under the coil to keep the end in place. Using the back of a spoon, create a well in the center of the coiled pastry. Add roughly 1 teaspoon sweetened cream cheese and 4-5 blueberries (or as many as you can fit.)

Move pastry to baking sheet and repeat with 11 remaining strips.

Bake for 20 minutes or until golden brown. While pastries are still hot, use a fork to poke all blueberries on each danish so they pop and create a jam like coating on the danish.

Allow pastries to cool on baking sheet for 3 minutes before removing to wire cooling rack.

While danish is cooling, prepare glaze by mixing powdered sugar and milk. Drizzle over cooled pastries.
