Pasta salad makes a great side dish for any meal. It is easy to make and is so delicious!
8 oz. salad macaroni
1 c. tiny broccoli florets
1/2 c. small diced cucumber
1/4 c. finely diced red bell pepper
1/4 c. finely diced green bell pepper
1/4 c. finely diced red onion
1 c. marinated tomatoes
1 c. marinade liquid
1/2 t. salt, adjust to taste
1/4 t. freshly ground pepper, adjust to taste
Cook pasta according to package directions, adding a generous tablespoon of kosher salt to the water as it cooks. Just before they are done cooking, add the broccoli. Let broccoli boil for about 30 seconds and then drain it. Rinse well with cold water.
Put the pasta, broccoli, cucumber, bell peppers, onion, tomatoes, and marinade liquid into a large bowl. Toss well to coat. Sprinkle with salt and pepper, stir again and taste. Adjust seasonings as needed.
Cover and refrigerate until ready to eat. Stir again before serving.
