If you can't decide between cake or cookies, maybe these cookies will be the answer! They are a cross between yummy, soft-baked chocolate chip cookies and sprinkle filled funfetti cake!
1 c. butter, at room temperature
1 c. dark brown sugar, packed
2 eggs
2 t. vanilla
1 t. baking soda
1 t. salt
1½ c. cake mix
1½ c. flour
½ c. sprinkles
2 c. chocolate chips
2 c. coarsely chopped Birthday Cake Golden Oreos (or a vanilla sandwich cookie)
In a bowl of a stand mixer, cream butter and sugar together for about 1 minute until light and fluffy. Add in eggs and vanilla and beat until smooth.
With mixer on low, add in baking soda, salt, flour and cake mix, stirring until mixture just comes together.
With mixer on low, add in sprinkles, chocolate chips, and chopped Oreos. Stir until evenly incorporated.
Chill dough for at least 2 hours, but overnight is better.
When ready to bake, preheat oven to 350 degrees. Line baking sheet with parchment paper.
Form dough into round balls, placing them 2 inches apart on baking sheet.
Bake cookies for 8-10 minutes, until edges are slightly golden.
Allow to cool on baking sheet for 3 minutes, then transfer to wire rack to continue cooling.
Makes 36 cookies.
