Chicken Florentine Pasta

Description

All of your favorite ingredients are in this wonderfully delicious Italian dish. Pasta, chicken, tomatoes, mushrooms and garlic make this meal special, but it is so easy, it can be made often.

Ingredients

2 oz. extra virgin olive oil
1 t. chopped fresh garlic
6 oz. grilled chicken
2 oz. sliced mushrooms
2 oz. diced Roma tomatoes
4 oz. chicken or vegetable stock
2 T. butter
1 t. mixed herbs
2 pinches salt and pepper
2 oz. fresh spinach
14 oz. cooked Rigatoni pasta
4 T. feta cheese
2 T. pesto bread crumbs-see below

pesto bread crumbs:
2 T. Panko bread crumbs
1 t. pesto

In saute pan, heat oil, then saute garlic, chicken, and mushrooms. Add tomatoes, stock, herbs, butter, 2 T. Feta cheese. Season with salt and pepper.

Cook pasta, then add the hot, cooked Rigatoni to saute pan. Add spinach, making sure not to over cook. Toss to combine.

Tower in center of a plate. Garnish with 2 T. Feta cheese and pesto crumbs. For a touch of extra color, garnish with fresh parsley.

For Pesto Bread Crumbs combine:
Panko Bread Crumbs
Pesto
Mix well and set aside for topping.
