This side dish doesn't take long to make and it is so good. Just make sure that you have enough for everyone to have seconds!
2 t. olive oil
4 cloves garlic, minced
2 T. butter
¼ t. salt
½ t. pepper
3 c. chicken stock or broth
½ lb. spaghetti, angel hair or fettucine pasta
1 c. grated Parmesan cheese, plus more for garnish
¾ c. heavy cream
2 T. chopped fresh parsley
In a large pan, bring olive oil to medium-low heat. Add the garlic and stir, allowing it to cook for 1 to 2 minutes. Mix in the butter until melted. Add the salt, pepper and chicken stock. Raise heat to high and let it come to a boil.
Once at a rolling boil, add pasta and cook for as long as the box’s directions indicate.
Reduce heat to medium and mix in the Parmesan cheese until completely melted. Turn off heat, then stir in the cream and parsley. Serve while hot. Garnish with more Parmesan cheese, if desired.
