These toasts are great to serve with a salad, any soup or just alone as an appetizer.
¼ c. olive oil
2 gloves of garlic, minced
½ baguette, thinly sliced , about 20 slices
freshly ground black pepper
Parmigiano Reggiano cheese, grated
Preheat oven to 390-400 degrees.
Using a blender, food processor or immersion blender, blend the oil and garlic until smooth. You will still have tiny bits of garlic in the mixture.
Slice baguette into thin slices and place them on a baking pan. Using a pastry brush, brush one side of the sliced baguette with the garlic oil and sprinkle with black pepper.
Using a fine grater, grate the Parmesan cheese on top of the sliced baguette.
Bake 15-20 minutes or until golden brown and crisp. Serve warm.
