If you love fried mushrooms, fried pickles or fried onions, then you will love these fried artichokes as well. They make a fantastic appetizer or side dish.
2 eggs
1/2 c. milk
15 oz. can artichoke hearts, drained and quartered
1 1/2 c. seasoned dry bread crumbs
3/4 c. flour
2 c. oil
1/4 c. grated Parmesan cheese
Heat oil in a deep-fryer or heavy deep skillet to 350 degrees.
In a small bowl, whisk together eggs and milk.
Place seasoned bread crumbs in a separate bowl.
Dip the artichokes in the egg mixture, then flour, egg mixture and bread crumbs, until they are fully covered.
Deep-fry 2 to 3 minutes, until deep golden brown. Remove to paper towels to drain excess oil.
Place on a serving tray and sprinkle with Parmesan cheese.
