Description
Enjoy your meat and potatoes all in one dish with this recipe. It is delicious and so easy to make.
Ingredients
- 3 – 4 medium russet potatoes, scrubbed and diced
- 1 lb. boneless, skinless chicken breasts, diced
- 4 slices bacon, cooked crisp, cooled and crumbled
- 1 1/2 c. shredded cheddar cheese
- 4 green onions sliced, green parts only
- 1/2 t. salt
- 1/2 t. ground black pepper
- 1/4-1/2 c. heavy cream
- 1 T. unsalted butter, cut into small pieces
Steps
- Preheat oven to 350 degrees. Lightly grease a 9 inch x 9 inch baking pan or casserole dish.
- Spread half of the diced potatoes in the bottom of the pan. Place the diced chicken breasts evenly over the top.
- Season the chicken with 1/4 teaspoon each of salt and pepper. Sprinkle on half the bacon crumbles, 1/2 cup of the cheese, and half the green onions.
