Cheesecake cupcakes, Oreo cookies and chocolate ganache...what dessert could take more delicious and make you happier? Not many, most likely.

Ingredients

• 20 Oreo cookies
• ¾ c. powdered sugar
• 1 lb. cream cheese
• 2 egg whites
• pinch salt
• ¼ c. heavy cream
• ¼ c. chocolate chips

Steps

1. You will need to leave 12 Oreos whole for the bottom of each cupcake. Chop 8 coarsely for the filling.
2. Preheat oven to 300 degrees. Line standard muffin tins with paper liners. Place 1 whole Oreo cookie in the bottom of each liner.
3. Beat together cream cheese and powdered sugar until smooth. Add egg whites one at a time and mix until combined at medium speed. Do not over mix. Add pinch of salt and mix. Fold in the coarsely chopped 8 Oreo cookies. Fill each cup with the mixture over the Oreo cookies , almost to the top.
