Cheesecake cupcakes, Oreo cookies and chocolate ganache...what dessert could take more delicious and make you happier? Not many, most likely.
20 Oreo cookies
¾ c. powdered sugar
1 lb. cream cheese
2 egg whites
pinch salt
¼ c. heavy cream
¼ c. chocolate chips
You will need to leave 12 Oreos whole for the bottom of each cupcake. Chop 8 coarsely for the filling.
Preheat oven to 300 degrees. Line standard muffin tins with paper liners. Place 1 whole Oreo cookie in the bottom of each liner.
Beat together cream cheese and powdered sugar until smooth. Add egg whites one at a time and mix until combined at medium speed. Do not over mix. Add pinch of salt and mix. Fold in the coarsely chopped 8 Oreo cookies. Fill each cup with the mixture over the Oreo cookies , almost to the top.
Bake for about 25 minutes, until center is set and toothpick inserted in the center comes out clean.
Let cool.
Chocolate ganache:
Melt chocolate and stir in heavy cream until combined.
With a spoon, spread ganache over cupcakes. Cool completely at room temperature before storing in the fridge.
