Need a delicious salad or side dish? This is the perfect one for you. It can be easily made vegetarian by omitting the bacon. Add sunflower seeds/nuts to add a little more texture, if desired.
Ingredients
- 18 oz. refrigerated three cheese tortellini
- 3/4 lb. - 1 lb. bacon
- 4 c. rinsed and chopped broccoli
- 1 pint grape tomatoes, rinsed and halved
- 3 green onions, rinsed and finely chopped
- 1 c. your favorite coleslaw dressing
Steps
- Cook pasta according to package directions. Drain, rinse with cold water, and refrigerate until cool, about 30 minutes.
- Fry bacon over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain on a paper towel-lined plate. Chop into 1/2 inch pieces.
- Place tortellini, bacon, broccoli, grape tomatoes, and green onions into a bowl. Pour dressing over ingredients, and toss lightly to coat. Chill in refrigerator before serving.
