What a great, simple, versatile dish. It can be changed to your liking by adding veggies, changing the pasta, changing to a different soup or by using tuna!
2 chicken breasts, cooked and shredded, or 1 can of breast meat chicken, drained and shredded
1 can cream of chicken soup
1 c. sour cream, regular or low-fat
16 oz. fettuccine noodles or pasta of your choice
1/4 c. shredded cheddar cheese
Italian bread crumbs
dried parsley flakes
salt and pepper, to taste
Preheat oven to 350 degrees. Spray a 13×9 inch casserole pan with non-stick cooking spray.
Boil pasta according to package directions. Drain, then return to the same pot. Add chicken, soup and sour cream to pasta. Mix well. Add salt and pepper to taste. Mix well.
Spread pasta mixture evenly into the casserole pan. Sprinkle with Italian bread crumbs, cheese, then parsley.
Bake 5-10 minutes or until the cheese is melted.
