Irish Roasted Salmon

Description

These delicious salmon fillets are marianated in Irish whiskey which has a peppery taste and honey which gives it a nice glaze.

Ingredients

  • 3-4 T. honey
  • 3-4 T. lemon juice
  • 1-2 t. lemon zest
  • ¼-1/2 c. Irish whiskey
  • 2-4 t. chopped fresh thyme
  • 2 -4 T. extra virgin olive oil
  • sea salt, to taste
  • freshly ground black pepper, to taste
  • 4 salmon fillets
  • 1 T. butter
  • 1-2 t. chopped fresh thyme

Steps

  1. Mix together honey, lemon juice, lemon zest, whiskey, thyme, and oil in a large zip lock bag. Add salmon and marinate 4-6 hours in the refrigerator.
  2. Preheat oven to 450 degrees.
  3. Remove salmon from marinade. Place on a foil lined sheet pan. Sprinkle with sea salt and freshly ground pepper.
