Do you need a green dessert to serve? Try this delicious pie then and garnish with whipped cream, crushed cookies or shaved chocolate on top.
16 whole chocolate sandwich cookies, like Oreos
2 T. butter or margarine, melted
24 whole, large marshmallows
2/3 c. Half and Half
2 T. Creme De Menthe Liqueur
2 T. Creme De Cacao Liqueur
1-2 drops green food coloring
1 c. heavy cream
extra cookie crumbs, for garnish
Add the whole cookies and melted butter to food processor. Pulse until well mixed. Press into the bottom and sides of a pie plate. Place in the refrigerator until ready for filling.
Heat marshmallows and Half and Half in a saucepan over low heat, stirring constantly. As soon as it’s all melted and combined, place saucepan in a bowl of ice to cool it down quickly. Stir occasionally to speed up the cooling.
When cool, add Creme De Menthe and Creme De Cacao. Add one or two drops green food coloring, if desired.
In a mixing bowl, beat whipping cream until stiff. Pour cold marshmallow mixture into the whipped cream and fold together gently.
Pour filling into the chocolate crust. Sprinkle with extra chocolate crumbs on top, if desired.
Place pie in the freezer. Freeze until firm, for about two hours.
Remove from freezer 10 minutes before cutting and serving.
