This makes a great weeknight dinner. It is delicious, fast and easy to prepare and it only dirties one pot.
1 lb. lean ground beef
salt and pepper, to taste
1 small onion, chopped
1/2 c. rice, uncooked
1 1/2 large handfuls of roughly chopped cabbage
4 oz. tomato sauce
1 c. water
7 oz. diced tomatoes, undrained or Rotel tomatoes
1 c. shredded cheese, your choice
Brown ground beef and onions. until onions are translucent. Drain off grease. Season with salt and pepper.
Add rice, cabbage, tomato sauce, water and diced tomatoes. Stir.
Cook until it boils and then reduce heat to medium-low. Cover and simmer for about 20 - 30 minutes or until rice is done and cabbage is soft. Do not lift lid before 20 minutes on order to make sure that the rice cooks well.
When cooked, top with cheese and cover with lid to melt a few minutes.
