Description
This makes a great weeknight dinner. It is delicious, fast and easy to prepare and it only dirties one pot.
Ingredients
- 1 lb. lean ground beef
- salt and pepper, to taste
- 1 small onion, chopped
- 1/2 c. rice, uncooked
- 1 1/2 large handfuls of roughly chopped cabbage
- 4 oz. tomato sauce
- 1 c. water
- 7 oz. diced tomatoes, undrained or Rotel tomatoes
- 1 c. shredded cheese, your choice
Steps
- Brown ground beef and onions. until onions are translucent. Drain off grease. Season with salt and pepper.
- Add rice, cabbage, tomato sauce, water and diced tomatoes. Stir.
- Cook until it boils and then reduce heat to medium-low. Cover and simmer for about 20 - 30 minutes or until rice is done and cabbage is soft. Do not lift lid before 20 minutes on order to make sure that the rice cooks well.
