It's easy to make your own Egg Drop Soup with just a few ingredients that you may already have on hand. In less than half an hour, you can enjoy your own at home.
5 c. chicken or vegetable stock
1/2 t. freshly minced fresh ginger
2 T. soy sauce
1/2 t. kosher salt, or to taste
1/4 t. white pepper or freshly ground black pepper, or to taste
2 T. arrowroot or cornstarch, + 2 T. water
2 eggs, beaten
2 green onions, thinly sliced
Combine stock, ginger and soy sauce in a large pot. Bring to a boil. Reduce heat to a simmer.
Add salt and pepper to taste. Whisk together the cornstarch and water, then pour into the simmering soup. Stir to combine and slightly thicken the soup.
Slowly pour in the beaten eggs, while stirring the soup in just one direction. The egg will spread out and feather through the soup.
Remove from heat and add the green onions. Taste and adjust seasonings as needed.
