Description
These potatoes are a great addition to any meal. They take a little time to make, but are worth it.
Ingredients
- 1 T. olive oil
- 1/2 lb. thick sliced bacon
- 3 1/2 lb. potatoes
- 3 cloves garlic, minced
- 1/2 c. Parmigiano cheese
- coarse salt
- freshly ground black pepper
- fresh parsley, chopped
- 1 small onion, chopped, optional
Steps
- Wash and peel the potatoes, place them in a pot of salted water and bring to a boil.
- Cook for 12 minutes or until potatoes are tender. Pierce the potatoes to see if they are tender.
- Drain and let cool completely.
