Oven Roasted Potatoes with Cheese and Bacon

Description

These potatoes are a great addition to any meal. They take a little time to make, but are worth it.

Ingredients

1 T. olive oil
1/2 lb. thick sliced bacon
3 1/2 lb. potatoes
3 cloves garlic, minced
1/2 c. Parmigiano cheese
coarse salt
freshly ground black pepper
fresh parsley, chopped
1 small onion, chopped, optional

Wash and peel the potatoes, place them in a pot of salted water and bring to a boil.

Cook for 12 minutes or until potatoes are tender. Pierce the potatoes to see if they are tender.
Drain and let cool completely.

Preheat oven to 425 degrees. Brush 1 T. olive oil on a baking sheet.

Cut bacon into pieces and cook until browned, but not crunchy. When the bacon is finished set aside. If using the onion, cook it in the same pan that the bacon until it is translucent.

Chop the garlic and parsley.

When potatoes are cool, peel and cut in half, or quarter if potatoes are large.

Brush half of the bacon drippings on the bottom of the baking sheet along with the olive oil.

Place potatoes cut side down on the prepared baking sheet. Sprinkle with course salt and freshly ground black pepper.

Bake 35-40 minutes. Rotate potatoes halfway through the baking time for an even color.

Reduce temperature to 375 degrees, turn potatoes over and sprinkle with the bacon, garlic, and Parmigiano cheese.

Return to oven for 15-20 minutes or until potatoes are evenly browned and cheese is melted.

Remove from oven and sprinkle with fresh parsley and more cheese, if desired.
