One-Pot Caprese Bowtie Pasta

Description

This is a delicious one pot vegetarian meal that will please the whole family or even guests. Put first 8 listed ingredients in the pot, cook, garnish and you are ready to eat.

Ingredients

  • 4-1/2 c. water
  • 3 T. olive oil
  • 1 lb. farfalle (bow tie) pasta
  • 1 pint grape or cherry tomatoes, halved
  • ½ c. basil leaves, packed
  • 4 garlic cloves, minced
  • salt, to taste
  • freshly ground black pepper, to taste
  • 1-1/2 c. part skim shredded Mozzarella cheese
  • fresh mozzarella cheese balls
  • fresh basil leaves, chopped for garnish
  • freshly grated Parmesan cheese, for garnish, optional

Steps

  1. Combine water, olive oil, pasta, halved tomatoes, basil leaves, garlic, salt and pepper in a large stock pot. Cook over high heat and bring to a boil.
  2. Reduce heat to a simmer. Cook 11 to 12 minutes, or until pasta is thoroughly cooked and water reduced, stirring occasionally.
  3. Remove from heat; let stand 2 minutes. Stir in shredded Mozzarella cheese; stir until thoroughly combined. Taste for salt and pepper; adjust accordingly.
