Description

This dish is comforting any time of the year. It is easy to make and will satisfy your cravings. Serve with a salad and crusty bread.

Ingredients

  • 8 oz. spaghetti
  • 4 oz. chopped pancetta, from the deli
  • 1/2 c. chopped onion
  • 2 large cloves garlic, minced
  • 2 T. dry white wine, optional
  • 2 eggs
  • 1/2 c. grated Parmesan cheese
  • 2 T. chopped fresh Italian parsley
  • salt, to taste
  • freshly ground black pepper, to taste
  • freshly grated nutmeg, to taste
  • chopped Italian parsley, for garnish

Steps

  1. Cook pasta al dente according to package directions. Drain, reserving ½ cup of pasta water; keep pasta warm.
  2. In a large skillet, cook pancetta over medium heat, stirring often until crisp, about 4 to 5 minutes. Remove with a slotted spoon; drain well on paper towels. Reserve 1 tablespoon
  3. drippings in the skillet.
