Enjoy this easy side dish with your favorite meat dish. It is delicious with 2 different cheeses, olive oil and minced garlic.
4 small potatoes, your preference of type
1 1/2 T. olive oil
2 garlic cloves, minced
1 T. chives, chopped
salt, to taste
pepper, to taste
2 T. grated cheese, your favorite
1 T. Parmesan cheese, grated
other herbs and spices, if desired
Preheat broiler. Line a baking sheet with parchment paper.
Wash potatoes and place in a pot of salted water. Bring to boil and cook till fork tender, about 15-20 minutes.
Mix oil with minced garlic clove. Set aside.
Place the boiled potatoes on the parchment paper. Crush the potatoes carefully. You may also use a paper towel and press the potatoes with the palm of your hand.
Pour some garlic oil over each potato. Sprinkle with salt and pepper. Add some Parmesan and your favorite cheese and chives. Season with other spices, if desired.
Broil for 7-10 minutes or until nice and crispy.
