Description

This isn't an ordinary zucchini bread. It is jazzed up with lemon zest and juice and has a wonderful glaze on top. No one will ever suspect that they are eating their veggies unless you tell them!

Ingredients

• 2 c. cake flour
• ½ t. salt
• 2 t. baking powder
• 2 eggs
• ½ c. canola oil
• 1⅓ c. sugar
• 2 T. lemon juice
• ½ c. buttermilk
• zest of 1 lemon
• 1 c. grated zucchini
• Glaze:
• 1 c. powdered sugar
• 2 T. lemon juice
• 1 T. milk

Steps

1. Preheat oven to 350 degrees. Grease a 9x5 inch loaf pan.
2. Mix flour, salt and baking powder in a medium bowl; set aside.
3. In a large bowl, beat eggs. Add oil and sugar until well blended. Add in the lemon juice, buttermilk, lemon zest tand blend together.
