Description
This isn't an ordinary zucchini bread. It is jazzed up with lemon zest and juice and has a wonderful glaze on top. No one will ever suspect that they are eating their veggies unless you tell them!
Ingredients
- 2 c. cake flour
- ½ t. salt
- 2 t. baking powder
- 2 eggs
- ½ c. canola oil
- 1⅓ c. sugar
- 2 T. lemon juice
- ½ c. buttermilk
- zest of 1 lemon
- 1 c. grated zucchini
- Glaze:
- 1 c. powdered sugar
- 2 T. lemon juice
- 1 T. milk
Steps
- Preheat oven to 350 degrees. Grease a 9x5 inch loaf pan.
- Mix flour, salt and baking powder in a medium bowl; set aside.
- In a large bowl, beat eggs. Add oil and sugar until well blended. Add in the lemon juice, buttermilk, lemon zest tand blend together.
