Glazed Lemon Zucchini Bread

Description

This isn't an ordinary zucchini bread. It is jazzed up with lemon zest and juice and has a wonderful glaze on top. No one will ever suspect that they are eating their veggies unless you tell them!

Ingredients

2 c. cake flour
½ t. salt
2 t. baking powder
2 eggs
½ c. canola oil
1⅓ c. sugar
2 T. lemon juice
½ c. buttermilk
zest of 1 lemon
1 c. grated zucchini

Glaze:
1 c. powdered sugar
2 T. lemon juice
1 T. milk

Preheat oven to 350 degrees. Grease a 9x5 inch loaf pan.

Mix flour, salt and baking powder in a medium bowl; set aside.

In a large bowl, beat eggs. Add oil and sugar until well blended. Add in the lemon juice, buttermilk, lemon zest tand blend together.

Fold in zucchini until well combined.

Add the dry mixture to the wet mixture; blend all together until well combined. Pour batter into the loaf pan. Bake 40-45 minutes.

While still warm, make the glaze then spoon it over the bread. Let the glaze set up. Serve.
