Can you believe that some people just don't like chocolate? They will love these brownies and chocolate lovers will enjoy them as well.
3/4 c. all-purpose flour
3/4 c. granulated sugar
1/4 t. sea salt
1 stick unsalted butter, softened
2 large eggs
2 1/2 T. lemon zest
2 1/2 T. lemon juice
lemon glaze:
5 T. lemon juice
9 t. lemon zest
1 c. icing sugar
Preheat oven to 350 degrees. Grease an 8×8 inch baking dish with butter; set aside.
Zest then juice two lemons; set aside.
In the bowl of an electric mixture fitted with the paddle attachment, beat flour, sugar, salt, and softened butter until combined.
In another bowl, whisk together eggs, lemon zest, and lemon juice until combined. Pour it into the flour mixture; beat for 2 minutes at medium speed until smooth and creamy.
Pour into baking dish. Bake for 23-25 minutes. It should turn golden around the edges.
Allow to cool completely before glazing. Do not overbake, or the bars will be dry.
Sift the powdered sugar and whisk it with lemon zest and juice.
Spread the glaze over the brownies; let glaze set.
