Description
This is a much healthier option for meatloaf than the typical recipe. Use the leftovers for meatloaf sandwiches, that is, if you have any!
Ingredients
- 1 lb. ground turkey
- 2 T. olive oil
- 1 small onion, diced
- 5 cloves garlic, minced
- 1 egg, lightly beaten
- 1/2 c. panko or breadcrumbs
- 1/2 c. milk
- 1 T. tomato paste
- 1 1/2 t. Italian seasoning
- 1 t. salt
- 1/2 t. freshly ground black pepper
- 1/4 c. ketchup
- cooking spray
Steps
- Preheat oven to 350 degrees.
- In a small skillet, heat olive oil over medium-low heat. Add onion and garlic, and saute for 5-7 minutes, until everything begins to caramelize. Remove from heat.
- While that sautes, combine panko and milk in a bowl; let soak.
