Pea, Cauliflower and Broccoli Salad

Description

Fresh vegetables with a delicious dressing make this salad a great one. If you need a vegan dish, leave out the bacon. It will still be great.

Ingredients

2 c. cauliflower, cut in bite-sized pieces
2 c. broccoli, cut in bite-sized
3/4 c. celery, diced
1 c. frozen peas
1-1½ c. cooked and chopped bacon

Dressing:
2 c. mayonnaise or Miracle Whip
¼ c. granulated sugar
¼ c. , grated Parmesan cheese
2 t. vinegar
¼ t. salt
¼ c. chopped onion
1/8 t. freshly ground black pepper

**sliced hard boiled egg for garnish, if desired

Toss cauliflower, broccoli, celery, peas, and bacon in a large bowl.

Combine mayonnaise, sugar, Parmesan cheese, vinegar, salt and onion in a medium bowl. Stir well.

Pour over salad. Toss to mix well.

Serve.

**Garnish with sliced hard boiled egg, if desired.
