Make this special Tex Mex salad for your next gathering. It has fresh ingredients topped with a great cilantro dressing.
large head Romaine lettuce
1 can black beans, rinsed and drained
1 large orange bell pepper
1 pint cherry tomatoes, halved
2 c. corn fresh or frozen, thawed
5 green onions
avocado, optional
dressing:
1 c. loosely packed cilantro, stems removed, roughly chopped
1/2 avocado or 1/2 cupGreek yogurt
2 T. fresh lime juice, or to taste
2 garlic cloves
1/4 c. olive oil
1 1/2 t. white wine vinegar
1/8 t. salt
dressing:
puree all dressing ingredients in a food processor or blender until smooth. Taste and adjust seasonings as necessary.
salad:
Finely chop romaine, bell pepper, and green onions and place in a large bowl with the halved tomatoes and corn and remaining ingredients.. Stir to combine. Toss with dressing.
