Chicken Puffs

Description

Serve these great chicken puffs as an appetizer or a lunch. They sure beat the fast food chicken nuggets or chicken strips!

Ingredients

non-stick cooking spray
3⁄4 c. chopped cooked chicken (rotisserie chicken is great for this)
4 oz. cream cheese, at room temperature
1⁄4 c. diced onion, scallions, or shallots
1 t. kosher salt
1⁄4 t. black pepper
8 oz. can refrigerated crescent rolls
1 c. Italian seasoned bread crumbs

Heat oven to 350 degrees. Spray a baking sheet with cooking spray.

Mix chicken, cream cheese, onion, salt, and pepper in a medium bowl.

Unroll crescent rolls and lay out on the counter.

Divide chicken mixture evenly among the 8 pieces of dough, spooning it into little clumps in the center of each roll.

Wrap dough up around the chicken, starting from large end and ending on the small end, pinching sides to seal.

Roll the puffs in the bread crumbs; place on the prepared baking sheet.

Bake puffs for 15 minutes, or until golden brown. Serve hot out of the oven.
