Tomato, Cucumber, and Avocado Salad

Description

Make this yummy fresh summer salad for your family get-togethers, BBQ's, pool parties or just a family dinner. No cooking is involved and it comes together quickly.

Ingredients

1½ c. colorful, chopped tomatoes or cherry tomatoes
1 cucumber, peeled, seeded, diced
1 avocado, diced
4 oz. feta cheese, cubed
2 T. red onion, minced
2 T. parsley, minced
2 T. olive oil
1 T. red wine vinegar
8 twists freshly ground black pepper

Chop tomatoes into a medium dice or slice cherry tomatoes in half. Place in a bowl.

Peel, seed and dice one cucumber . Place in the bowl.

Remove the pit of an avocado. Use a spoon to scoop out the avocado from the peel, then dice it into cubes and add to the bowl.

Cube the feta cheese and add to the bowl.

Add minced red onion and minced parsley to the bowl.

Whisk together olive oil, red wine vinegar and black pepper in a separate bowl or container, then pour over the salad.

Toss salad gently so the feta and avocado don't break up. Serve immediately.

**If refrigeration is needed, don't add the avocado until ready to serve.
