This simple to make salad is delicious and wonderfully fresh. In just a few minutes you will have a great salad that is healthy too.
1 cucumber, sliced
1 1/2 oz. crumbled feta
1 clove garlic, minced
2 avocados, peeled, pitted, and diced into chunks
2 t. lemon juice
1/2 bunch cilantro, chopped
1/2 red onion, thinly sliced
2 Roma tomatoes, diced
drizzle good olive oil
salt and pepper, to taste
red wine vinegar, optional
Toss together the tomatoes, onion, cucumber, feta, and garlic in a large bowl.
Add avocado and drizzle lemon juice on the avocado.
Stir in cilantro. Season with salt and pepper, to taste.
Drizzle top with olive oil. Add a drizzle of red wine vinegar, if desired. Mix well.
