With store bought pesto, you can have this meal ready in no time. Add chicken or broccoli or other ingredients to your own tastes. Serve with a salad and bread sticks.
1 c. store bought basil pesto,
2 T. extra virgin olive oil
¼ c. heavy cream
salt and pepper, to taste
1 lb. pasta, cooked
1 c. pasta water, reserved
fresh parsley, if desired
Heat olive oil over medium heat.
Add pesto; mix into the oil. Stir often as pesto warms.
When warmed and a little bubbly, slowly stream in the heavy cream, stirring constantly. as you stir.
Add a little pasta water to thin out the sauce, if necessary.
Turn down the heat; continue to stir to incorporate the cream and pesto.
Salt and pepper to taste. Garnish with fresh parsley, if desired.
