Cheddar Bacon Buttermilk Biscuits

Description

These easy drop biscuits are full of smoky flavor, bacon and cheddar cheese. The crispy golden brown bottoms make them irresistible. Just be sure to bake enough so everyone can have seconds.

Ingredients

2 c. self-rising flour
1/2 c. cold butter, cubed plus 2 T. melted butter
1/4 t. smoked paprika or cayenne pepper
8 slices bacon, cooked and crumbled
1 1/2 c. shredded sharp cheddar cheese
1 c. whole buttermilk

Preheat oven to 450 degrees. Brush the sides and bottom of a 10 inch cast iron skillet with melted butter, reserving some butter to brush the tops.

In a medium sized mixing bowl, cut butter into the flour and paprika until it resembles coarse crumbs.

Mix in bacon and cheddar cheese. Make a well in the center; add 1/2 cup buttermilk.

Mix with a fork, add more buttermilk until it forms a soft dough and pulls away from the sides of the bowl.

Use a 4 oz. ice cream scoop to divide dough. Place in the skillet side by side. Brush tops with melted butter.

Bake 15 minutes until the tops are golden. Serve hot.
