Spaghetti alla Carbonara

Description

Ingredients

  • 8 oz. pancetta
  • 16 oz. spaghetti
  • 3 eggs
  • 5 T. Pecorino Romano, finely grated
  • 2 cloves garlic, minced
  • salt, to taste
  • 1 t. pepper
  • 1 T. butter

Steps

  1. Cut pancetta into 1/3 inch dice; cook in a skillet over moderate heat in butter, stirring, until golden brown and a little crunchy.
  2. Add minced garlic, cook a little and remove from heat.
  3. Cook spaghetti in boiling well salted water until al dente.
