Cheese filled tortellini, fresh veggies and crisp bacon make this salad sumptuous. Bring it to your next picnic or BBQ, or serve it at home. Everyone will beg you to make this over and over again!
38 oz. frozen cheese-filled tortellini
4 c. fresh broccoli florets
2 c. cherry tomatoes, cut in half
2 T. fresh chives, chopped
1 c. reduced-fat coleslaw dressing
1 lb. bacon, crisply cooked and crumbled
1/4 c. sunflower seeds
grated Parmesan cheese for garnish, optional
Cook and drain tortellini as directed on package. Rinse with cold water; drain.
In a 4 quart bowl, mix tortellini, broccoli, tomatoes, chives and dressing. Cover and refrigerate at least 1 hour, to blend flavors.
Just before serving, stir in bacon. Sprinkle with sunflower seeds. Sprinkle with Parmesan cheese, if desired.
