Take this special cake to your next gathering. It is beautiful, moist and creamy.
Cake:
1 box Yellow Butter Cake mix
1/2 c. oil
4 eggs
11 oz. can mandarin oranges, not drained (save some for garnish, if desired)
Frosting:
4 oz. box instant vanilla pudding
22 oz. can cold crushed pineapple with juice
1 container whipped topping
Preheat oven to 350 degrees. Grease and flour 3 cake pans or one 9x13 inch pan.
Mix cake, oil and eggs. Add can of oranges including juice. Mix by hand to have orange pieces in finished cake or mix with electric mixer, but you won't have whole pieces of oranges in the finished cake.
Divide batter into the 3 pans or put it in the 9x13 pan.
Bake 22 - 25 minutes.
Frosting:
Mix pudding and cold crushed pineapple including the juice to thicken juice and pineapple.
Fold in whipped topping; frost cooled cake. Garnish with mandarin oranges, if desired.
Chill in refrigerator before serving.
