A Healthy Broccoli Salad that the family will enjoy.
2 large heads of broccoli, cleaned and cooked into bite sized pieces
1 whole garlic clove peeled
2 t. garlic minced
1/2 olive oil
3 T. freshly squeezed lemon juice
salt and pepper to taste
Rub the interior of a bowl, preferably a wooden bowl, with the whole garlic clove. Cook the broccoli about 4 minutes in boiling water; drain. Cut broccoli into bite sized pieces. and put into the serving bowl. Mince garlic and add it to the oil and lemon juice, along with salt and pepper to taste. Whisk. Pour over the broccoli. Toss to coat. Season more as needed.
