This pasta salad is so full of goodies, it can be served as a main dish as well as a side or as a salad.
1 lb. thin spaghetti, linguine or angel hair pasta, broken into 4 inch pieces
4 Roma tomatoes, diced
1 medium zucchini, diced
1 medium yellow zucchini squash, diced
1 green pepper, diced
1 red pepper, diced
1 red onion, diced
1 cucumber, diced
4.5 oz. sliced olives, drained
8 oz. cheddar cheese, cut into small cubes or 8 oz. shredded cheddar cheese
Dressing:
16 oz. Italian dressing, your favorite
1/2 c. grated Parmesan cheese
1 t. paprika
1/2 t. garlic powder
Topping:
1-1 1/2 t. Salad Supreme Seasoning, optional
Cook pasta according to package directions. Drain, rinse and drain again. Cool. Set aside.
In a large bowl, add cooled pasta to the tomatoes, zucchini, peppers, onion, cucumber, olives and cheese. Stir well.
In a small bowl, mix the dressing ingredient together well and pour on the top of the pasta and vegetables. Mix well. Sprinkle on the salad seasoning, if desired. Cover.
Refrigerate at least 2 hours before serving.
