Veggies don't have to be boring. Serve them in this delicious salad for your weeknight or weekend meal. It is especially good for BBQ's and when company comes.
½ c. red onion, sliced or diced
½ c. diced cooked carrots
½ yellow, red or green bell pepper
1 tomato, diced
2 c. cauliflower, cut into bite sized pieces
2 c. broccoli, cut into bite sized pieces
½ c. celery, cut into bite sized pieces
Dressing:
2 c. mayo or Miracle Whip
1/4 c. sugar
1/4 c. Parmesan cheese
2 t. vinegar
1/4 t. salt
1/8 t. pepper
Wash veggies.
In a large bowl, toss cauliflower, broccoli, celery, onion, cooked carrots, pepper and tomato.
In a medium bowl, combine mayo, sugar, Parmesan cheese, vinegar, salt. Mix well.
Pour dressing over salad; toss to coat.; mix well and serve.
