This easy, quick salad is full of fresh veggies, pepperoni, pasta and Cheddar cheese. Italian dressing gives it a tasty flavor.
12 oz. package twist rainbow pasta or your favorite
1/2 head fresh cauliflower, cut into small florets
1/2 head fresh broccoli, cut into small florets
1/2 red onion, cut into 1/2 inch chunks
1 c. Cheddar cheese chunks, cut into 1/2 inch chunks
1 c. pepperoni slices, cut in halves
16 oz. can black olives, drained
3/4 c. Italian dressing, your favorite, plus more before serving
salt + pepper, to taste
In a large pot of boiling salted water, cook pasta according to package directions; drain; cool.
In a large bowl, combine remaining ingredients; add cooled pasta; toss until evenly coated. Refrigerate until ready to serve.
