Description
Make yourself a healthy but delicious breakfast with these egg cups. Serve with toast, if desired.
Ingredients
- 1 avocado
- 2 eggs
- salt and pepper
Steps
- Preheat oven to 425 degrees. Line a baking pan with foil, if desired.
- Cut avocado in half. Remove pit. Scoop out just enough avocado in each half to fit an egg yolk. Check to see if each half will sit level on the pan without tipping. If necessary, slice off a little on the bottom side to make them level so that the egg will not slide out.
- Carefully separate the yolk from the egg whites.
