Make yourself a healthy but delicious breakfast with these egg cups. Serve with toast, if desired.
1 avocado
2 eggs
salt and pepper
Preheat oven to 425 degrees. Line a baking pan with foil, if desired.
Cut avocado in half. Remove pit. Scoop out just enough avocado in each half to fit an egg yolk. Check to see if each half will sit level on the pan without tipping. If necessary, slice off a little on the bottom side to make them level so that the egg will not slide out.
Carefully separate the yolk from the egg whites.
Carefully add a yolk to the center of each avocado, then add in egg whites to the top. Season with salt and pepper, to taste.
Bake 15-20 minutes.
