Description
What makes a summer gathering the best? Potato salad, that's what! It makes a great side dish for those graduation parties, pool parties and BBQs. Just be sure to keep it cold and serve it cold to prevent food poisoning.
Ingredients
2 lb. potatoes, peeled and cut into 3/4-inch chunks
1 c. mayonnaise
1 1/2 t. salt
1/4 tsp. freshly ground black pepper
1 c. thinly diced celery
1/2 c. chopped green onions
4 hard-boiled eggs, 2 chopped and 2 sliced
several squirts of mustard, your favorite
crumbled crisp bacon, optional

Cover potatoes with water in 4-quart saucepan; bring to a boil over medium-high heat. Reduce heat to low and simmer until potatoes are tender, about 10 minutes.
Drain and cool slightly.
Combine mayonnaise, mustard, salt and pepper in a large bowl. Add cooled potatoes, celery, green onions and hard boiled eggs; toss gently. If desired, stir in some crumbled bacon.
Serve chilled.
Garnish with sliced hard boiled eggs as a garnish, if desired.
