If you are wanting to make that Jamaican Jerk dish and can't find the spice at the grocery store, make your own with this fantastic recipe.
1 T. onion flakes
2 t. ground thyme
1 t. dried parsley
1 t. ground allspice
1⁄4 t. ground cinnamon
1 t. ground black pepper
1⁄2 t. cayenne pepper
1 t. paprika
1⁄2 t. hot pepper flakes
1⁄4 t. ground cumin
1 T. garlic powder
2 t. salt
1⁄4 t. ground nutmeg
2 t. sugar
2 t. dried chives
Mix together all ingredients. Store in a tightly closed glass jar and should keep for over a month.
Typically use 1 to 1 1/2 tablespoons of seasoning for each pound of meat.
