This no-bake dessert will tickle your fancy. There is no need to heat up the kitchen to make a delicious dessert when you can just use your microwave and the refrigerator to do all of the work.
½ c. unsalted butter, softened (1 stick)
¾ c. packed light brown sugar
1 tsp. vanilla extract
2 c. all-purpose flour
14 oz. can sweetened condensed milk
12 oz. mini chocolate chips, or semi-sweet chocolate chips
Topping:
½ cup creamy peanut butter
½ cup milk chocolate chips or semi-sweet chocolate chips
Line an 8x8 inch pan with parchment paper or aluminum foil so that all sides hang over so that the bars can be easily lifted out later. Set aside.
In a large mixing bowl, mix together butter and brown sugar until it is fluffy, about 3 minutes. Add vanilla extract; beat until combined.
Turn mixer to low; alternate between the flour and the sweetened condensed milk until well-combined.
Stir in chocolate chips.
With floured hands, press the cookie dough into the bottom of the 8x8 pan.
Cover with plastic wrap; refrigerate 3 hours or overnight until firm.
Topping:
Combine peanut butter and ½ cup chocolate chips in a microwave safe bowl. Stir every 15-30 seconds until totally melted and smooth. Allow to cool a little.
Pour and spread evenly over the top of the chilled dough; chill until topping is firm, about 1 hour. Remove from refrigerater when ready to serve.
Makes 16 bars.
